This rice miso is made by Tamai Miso, a traditional brewery in Shinshu.
It is made from 100% japanese sourced ingredients: soybeans, rice, and salt.
It is made using the traditional method of Marusan Ai's signature miso, “Junsei Koji Miso,” which has been loved for over 50 years, and is carefully aged while retaining the grains of koji.
