AJINO KYOEN is created using our unique "Motojikomi Method" without any additives. with a mild flavor that strikes a decent balance between sweetness and umami. The three varieties of koji (rice, soybeans, and barley) are combined during the initial brewing process to produce a flavor that balances the umami of soybean miso, the sweetness of rice miso, and the scent of barley miso. It is distinguished by its mellow flavor. You can enjoy the flavor of this fresh "raw" type miso, which is not heat-sterilized and has active yeast.
